I keep looking online so I can include some mouth watering picture but this recipe book just keeps giving me more to love! What is a girl to do?
¾ cup dry lentils
1 small onion
1 carrot, finely diced
4 mushrooms, finely chopped
1 cup tomato sauce
2 ½ cups vegetable stock
2 tbsp Braggs or tamari
½ cup dry alphabet pasta
In a medium saucepan, combine the lentils, onions, carrots, mushrooms, tomato sauce, stock and Braggs. Cover and simmer for 20-30 minutes, or until tender. Add the dry pasta. Cover and simmer for 10 more minutes, or until pasta is tender, stirring occasionally. Makes 2 servings.
